Full-Screen Start Menu is useful on devices where Desktop has less or zero meaning. If you have a device that works as a tablet, then it is likely that you would mostly launch apps. Tablet Mode is useful if you do not need to use Mouse or keyboard all the time, and the work is casual. You can launch apps, type ion a few things, watch movies and so on. So unless you need the exact same things, Tablet mode is not for you.
