These options will also become available when you print, but if you want it as default, this is where you need to change.

Once all this is updated, these settings will be available to every app that can print. You will be able to print on the double side.

When you are printing a document that will be flipped like a book, select Flip on Long Edge, but if you will flip like a calendar, then select a short edge.
